Amber-red and tart-adjacent. A limited run from our most secluded apiary. The unique microclimate produces a nectar flow unlike anything else in the county.
01. Tasting Notes
Distinctly tangy with notes of green apple and warm spice. A surprising and vibrant profile.
02. About This Site
Tucked away in a creek bottom surrounded by dense stands of smooth sumac. The microclimate here creates a unique, concentrated nectar flow.
03. Pairing
Incredible in marinades for pork or poultry, or paired with a creamy goat cheese.
Note on Crystallization
Crystallizes quickly due to high glucose content. Often enjoyed in its crystallized, spreadable form.
All raw honey will eventually crystallize. This is a natural process and a sign of high-quality, unheated honey. To return it to a liquid state, place the jar in a warm water bath (not boiling) until the crystals dissolve.
