The Cross Timbers site sits on a ridge of sandstone and dense oak forest. The soil is thin, but the deep-rooted oaks provide a reliable nectar flow even in dry years.

Excellent drizzled over sharp blue cheese, glazed on roasted root vegetables, or stirred into a dark roast coffee.
Note on Crystallization
Due to its higher fructose content, Blackjack Oak honey resists crystallization and remains liquid longer than our other varietals.
All raw honey will eventually crystallize. This is a natural process and a sign of high-quality, unheated honey. To return it to a liquid state, place the jar in a warm water bath (not boiling) until the crystals dissolve.
